Easy Chicken Cordon Bleu

I made this delicious, quick and easy dish last night and since my family gave it great reviews, I thought I’d share my recipe with you! Prep time is minimal and there’s very little clean up since it’s all made in one pan. The homemade course mustard sauce is what gives it great flavor, so be sure not to skip this part! Follow these simple steps to make your very own dish.

Ingredients:

4 chicken breasts, pounded out
8 slices of thin sliced black ham
4 slices of swiss cheese, cut in half
¼ cup goat cheese
1 tbsp yellow mustard
3 tbsp course ground mustard
1 tbsp balsamic vinaigrette  
1 tbsp olive oil

Seasonings:
*I don’t measure these, just season to your own liking
Paprika
Garlic powder
Oregano
Salt & pepper

Directions:

After you pound out your chicken breasts, slice through the centers making a pocket, careful not to cut through the top or bottom of chicken. Layer swiss cheese and ham by splitting your swiss in half and putting 2 slices of ham in the center of the cheese, then stuff into the chicken.

In a separate dish combine yellow mustard, ground mustard, balsamic vinaigrette and goat cheese. Whisk together until well combined. Spread a tablespoon or more onto the center of your chicken where the layer of ham is. In a large non-stick pan, add your olive oil and chicken breasts on medium heat. Sear for 7 minutes on each side. Spread any leftover mustard sauce on the top of your chicken and layer with another whole slice of swiss cheese until melted. Remove from heat, serve and Mangia!
