Chicken Caprese

This balsamic marinated chicken with fresh mozzarella, tomato and basil is one of my favorite dishes to make! It’s a quick and easy dish that has all the same flavors as the traditional Italian appetizer, Caprese Salad. This dish is so good, that you will want to eat it straight from the pan! In my opinion, its the balsamic glaze that makes the dish. The rich, tangy flavor of the glaze combined with pan roasted tomatoes and garlic, melted mozzarella and fresh basil is absolutely to die for! To make this dish, follow the steps below.

You Will Need:

4 thin cut chicken breasts (you can use a regular breast if you prefer but you will need to adjust your cooking time. I chose thin cut because regular chicken breast is too thick for me and I don’t care to pound it out).
1/2 Cup of Rachel Ray Balsamic Drizzle Reduction
8 ounce fresh mozzarella ball
1 pint of cherry tomatoes
8 cloves of garlic (unless you’re a garlic lover like me, add more!)
Olive oil
Salt, pepper & Italian Seasoning

Directions:

1. Season both sides of your chicken breast generously with salt, pepper and Italian Seasoning.
2. Drizzle frying pan with olive oil and place chicken in the pan on medium heat. Add halved cherry tomatoes & whole garlic cloves. Drizzle lightly with balsamic glaze. (You will add more at the end)
3. Cook chicken on both sides for 2-3 minutes and then remove from the pan and onto a plate for now. (Because your chicken is thin cut, it does not need need much time to cook through).
From here, allow your garlic and tomatoes to simmer in the juices until soft and browned.
4. Place your chicken back in the pan, covering with the roasted garlic and tomato, sliced mozzarella and basil. Cover your pan with a lid and let cook for another 3-4 minutes until cheese is melted.
5. Remove from heat and drizzle your dish with the rest of your balsamic glaze (add more if you please) and serve right from your pan!
